Knife confidence
Good knife skills are the quiet hero of summer cooking. In Gilly’s Fish & Shellfish and Meat Masterclasses, knife confidence is one of the first things she teaches – not for show, but because it transforms the way you work. Clean cuts mean better yield, quicker prep, and produce that looks as good as it tastes. When you’re slicing ripe tomatoes, filleting fresh fish or prepping a barbecue feast, this skill makes all the difference.
Herb preparation
A summer kitchen is nothing without herbs. Whether you’ve got a garden packed to the brim with them, or a single window box, fresh herbs bring brightness to everything from salads to marinades. And when the plants are abundant, Gilly’s favourite trick is to freeze the excess.
Two easy methods that Gilly uses…
- Freeze chopped herbs in an ice‑cube tray with water or oil
- Flash‑freeze them flat in a freezer bag
Wash, dry, chop, freeze — and you’ve got summer flavour ready for up to six months.
Stone fruit preparation
Here in the UK summer is the season of cherries, plums and peaches – the fruits that practically beg to be eaten straight from the punnet (or the tree!). But with a little preparation, they can be enjoyed long after the sunshine fades. Stoning and preserving them (whether through bottling, compotes or simple freezing) means you can bring a taste of summer to your winter table. It’s one of Gilly’s favourite seasonal rituals and you’ll see evidence on the shelves of The Cook’s Place.
Barbecuing vegetables
Summer vegetables deserve heat, colour and a little char. Forget boiling — this is the season for barbecuing, chargrilling and quick sautéing. The flavour payoff is huge, especially when you choose what’s in season.
Gilly’s high‑summer favourites:

A drizzle of oil, a sprinkle of salt, and the grill does the rest.
Making quick vinaigrettes
A good vinaigrette is the simplest way to elevate a dish. At The Cook’s Place, we use Yorkshire Rapeseed Oil from YRO – local, cold‑pressed, golden and beautifully balanced. Add Dijon mustard, wine vinegar and seasoning, shake it all together in a jar, and you’ve got a dressing that turns any salad into something special.
